You have to try this!

Tonight jaimes and I had some butternut squash fries. Here is the recipe (I picked it up at Target the other day) They are AWESOME!! So good!! Cheap and good for you too!! Yippee, it’s fall!
Crunchy Butternut squash fries

Ingredients: 1 medium butternut squash, 1 cup of cornflakes crushed, 2 t of Archer Farms seasoned salt, 1/2 cup of Archer Farms pure maple syrup.

** I used WAY more seasoning that I should have…so they were spicy. And (Sorry Target) I just used what I had in my cupboard already not the Archer Farms seasoning. I also used our light AJ syrup and that worked pretty well.

Directions:

1. Heat oven to 425 degrees. Line 2 baking sheets w/ aluminum foil and spray with nonstick cooking spray. Microwave squash for 2 minutes on high (makes for easier cutting)

2. Cut squash in half lengthwise and scoop out the seeds. Peel squash, cut into quarters. Cut quarters into 4×3/4″ sticks

3. Mix together the cornflake crumbs and the seasoned salt itno a shallow dish. Pour the maple syrup into a second shallow dish. Dip the squash sticks into the syrup and then coat witht eh crumb mixture. Place coated sticks in a single layer on the prepared pan.

4. Bake for 45 to 60 minutes or until squash sticks are fork tender.

Makes 4 servings
